While in Segovia, I made sure to order cochinillo for lunch. A specialty of Segovia, cochinillo is roasted suckling pig. It was absolutely DELICIOUS, and I stuffed myself quite hardily. Though I must say, I was rather disappointed that I wasn’t able to get a photo of the one with the head on it…it would’ve made quite the memorable photo, to be sure.
Suckling pig is one of the things I’ve wanted to try for a long time!
I highly recommend it!
